Baked Potato Wedges

2 things inspired me to make this dish.  One, I had some butter in the house which I needed used ASAP and two, I was on a no wheat and no deep fried foods diet (I do that sometimes, but I lack discipline…lol) so I sat down, did a bit of Google to see if it is possible then decided to try it my way.

The result was a beautiful tray of healthy (I think) baked potatoes wedges which I served with pan fried fish.  You can substitute the butter with vegetable oil and add as many spices as you can.  I try  my best to do kid friendly recipes, so I use minimum spices.

Ingredients

  • 4 large potatoes peeled and cut into wedges
  • 1 tsp of butter
  • ½ tsp salt
  • ¼ tsp ground paprika
  • 2 cloves garlic minced (optional)

Instructions

Pre heat oven to 170°C then grease a baking tray n set aside.

In a bowl, add potatoes, butter, salt and garlic and mix with your hands until combined.  Note that it won’t be perfect but still works.

Place the potatoes on the baking tray, ensuring they are well spread so that they can cook evenly

Sprinkle ground paprika on top of your potatoes as evenly as you can.

Put the tray in the hot oven for about 30 minutes until the potatoes are soft and cooked through.  Note that the time will vary depending on how thick or thin you slice your potatoes.

Remove from oven, plate and serve hot with a dip of your choice (optional).
