This is an easy beef pilau recipe which can be done on a week night and enjoyed by the whole family. I used a gas cooker which is what most of our households use on a daily and used already ground pilau masala to reduce the total amount of time.
Alafu I am just so happy that nowadays we can enjoy a good meal of pilau any day any time. Just like chapo, it is no longer reserved for parties or special occasions. Every day is special and every meal a party provided there is great food, sio?
For this rice pilau recipe, you will need; Beef, Rice, good quality rice is so important, I used Basmati rice. ground pilau masala, garlic, onions in plenty. I think plenty of onions is the secret ingredient to the very brown color in pilau. You will also need tomato paste. You could use a fresh ripe tomato finely diced or blended. Cooking oil, and don’t be stingy with it and water.
Here are the cooking instructions; In a cooking pot, add the beef and 1 cup of water and boil till water is evaporated and the beef has browned. Then remove and set aside.
In the same pot heat cooking oil then add the onions and garlic, sauté until soft and brown then add pilau masala and salt, cook a bit, feeling the aroma then add tomato paste and cook about ½ a minute stirring continuously to avoid burning and sticking to the pot.
Add the beef and mix in well, add potatoes, stir twice or thrice then add 3 cups of water and bring to a boil.
Once the water is boiling and bubbling add in the rice and stir from the bottom of the pan to prevent it from setting at the bottom and burning.
Mix well, cover and reduce heat the lowest setting. If using a jiko, close the jiko door then remove some hot charcoal pieces and place on top of the lid (fire proof lid) and let it cook pole pole.
Cook slowly until all the water has evaporated and the rice is soft and well done.
Turn off the heat and fluff the rice a bit with a fork.
Let it cool just a little then serve with as side of kachumbari. Yummmmy!
