I was having a friend over for lunch this day and had to think of a quick meal because we have become such a busy people huh!? I was in and out of the kitchen in 40 minutes having made both the rice and beef mince and got out the good china and vijiko za wageni…haaahah.
You can serve this with rice, chapatti, spaghetti or potatoes and a side of vegetables to make it balanced.
Here is what you need; minced beef, onion, tomatoes, green bell pepper, garlic cloves, paprika, salt, cooking oil coriander and water of course.
Put the beef in a sufuria add about ½ cup of water, bring to a boil and crumble the minced meat with a wooden spoon.
Allow to boil till all the water has evaporated and the meat is nicely brown then remove from sufuria/pot and set aside.
On the same pot heat oil then add onions and garlic and sauté till onions are soft. Add capsicum, tomatoes, salt and paprika and continue cooking while stirring occasionally then cover and allow cooking for about 2 minutes or until tomatoes are well done.
Add the minced meat and mix until well combined. Pour in ½ cup of water (more if you wish to have more soup) stir then simmer for about 3 minutes, just a short time because the beef was already cooked from the boiling..
Add coriander mix it in then remove from heat. Best enjoyed hot.
